About Soy Meat
Our soy meat is made from 100% Japan-grown soybeans, with no additives. It offers a mouthfeel similar to real meat, but this healthy alternative contains very little fat. Instead, it has lots of protein and fiber, and gives you all the nutrition of soybeans, including soy isoflavone, lecithin, and saponin.
To use, soak in a large bowl of boiling water for 5 minutes. (The soy meat will gain 2-3 times in weight.) Place in a colander and press down firmly using the bottom of a ladle, etc., to remove excess water. The soy meat is now ready to use in cooking in place of ground meat.
Sample recipe: Spicy Soy Meat Tan Tan Pork Bowl
Ingredients (for 2):
- white rice (for 2)
- 50g Soy Meat
- 80g pork belly
- 4 stocks of garlic chives boiled in water
- 50g bamboo shoots
- 10g shiitake mushrooms
- 1 T oyster sauce
- 2 T doubanjiang
- 1 T gochujang
- 1T sweet flour paste
- 1 T soy sauce
- 1 T sake
- a pinch of garlic
- a pinch of ginger
- 2 egg yolks
- shredded red pepper (to taste)
Directions:
- After soaking the soy meat in boiling water, place in a colander and press down firmly to remove excess water. (Try to remove as much water as you can. The flavors will penetrate better.)
- Chop up the pork belly, shiitake mushrooms, bamboo shoots, and garlic chives.
- Blend the oyster sauce, doubanjiang, gochujang, sweet flour paste, soy sauce, sake, garlic, and ginger together to make the sauce.
- Pan-fry the pork, mushrooms, and bamboo shoots. When cooked, add the soy meat and sauce. Gently mix in the garlic chives and top with shredded red pepper and egg yolk.
Sample recipe: Meatloaf
Ingredients:
- 50g Soy Meat (minced)
- 300g ground meat (mixed beef and pork)
- 40g vegetable mix (corn, carrot, and peas)
- 70g onion
- 15g each of red and yellow bell pepper
- 1 egg
- 50g panko
- 3 T milk
- 1 T ketchup
- 2g consommé
- 2.4g salt
- a pinch of pepper
- a pinch of nutmeg
Directions:
- After soaking the soy meat in boiling water, place in a colander and press down firmly to remove excess water.
- Chop the onion and bell pepper roughly the same size as the other vegetables.
- Season the ground meat with salt and knead until it sticks together. Add the soy meat.
- Mix in the vegetables, egg, panko, milk, ketchup, consommé, pepper, and nutmeg.
- Press into a mold so that there are no air pockets.
- Bake for about 35 minutes in an oven preheated to 200 C.
Sample recipe: Pasta with Meat Sauce
Ingredients:
- 10g Soy Meat
- a pinch of ginger
- 1/4 onion
- 3 T ketchup
- 1 T Worchestershire sauce
- 1 cube instant consommé
- a pinch of salt and pepper
- 100g pasta
Directions:
- After soaking the soy meat in boiling water, place in a colander and press down firmly to remove excess water.
- Heat oil in a frying pan, add the ginger and cook until fragrant.
- Pan-fry the finely chopped onion until soft, then add the soy meat and continue to cook.
- Add ketchup, Worchestershire sauce, instant consommé, salt and pepper until the flavor is the way you like.
- Add cooked pasta to the sauce and blend together.
